try this,., season the fillets with chili powder, zattarains and lemon pepper seasonings,., let sit in the fridge over night, well drained,. then the next day, get you a paper bag and add 1 part corn meal one part flour and 2 parts italian bread crumbs,., shake it up and put the fillets in coat them good in the batter...., then fry 350 F peanut oil..when the fish rise to the top they are done.. if u like em crispy, a little longer.. its amazing,, get you a side of cole slaw and a root beer and life is good!!! and KYRIE ALAISON!!

Aint no cajun dipping fish in an egg batter.

Just season with hot sauce, salt, pepper, a little cayenne, and then some mustard to help breading stick.

Personal preference as to whether you like straight cornmeal, flour, or a mix of the two.

I prefer Louisiana fish fry products with lemon.

definitely don't do egg with my fish


same here. 50% hot sauce (franks) and 50% brown mustard!

For those that use flour along with your cornmeal, try substituting baking powder for the flour. Makes a super light, super crisp crust.

How many New Orleans restaurants have you worked in? Yes, the mustard/hot sauce is popular in homes. In my experience, many Louisiana restaurants use the egg wash.

Math geek, I will give you a big Heck Yes, for sharing your recipe! I have eaten and prepared crappie many different ways, but for some reason(my wife’s insistence), I always come back to the “old time southern crappie recipe” once published in Crappie (masters?) magazine, many years ago…very simple recipe, hard to mess up (been there, done that), slowly sautéed in butter, rather than fried. Hard to cook for a large crowd, but melts in your mouth! And my wife NEVER complains when I say I’m going crappie fishing! I will try your recipe, next time I pull out my fry daddy, a d thanks again for sharing!

No doubt! But during lent, I wanted to post a few fried fish recipes, owing to the popularity of frying during this season.
