I'll admit I was pretty much clueless on this until my brother in law insisted I remove the casings or he wouldn't eat . . . Well, I tested, and what he said was true. So now I'm unwrapping mine as well. Natural casings - or none at all. I'm sure some of you guys that do your own sausage don't use anything like this commercial grade stuff - they get it from China down to pennies.
