 Best stuffed pepper I have ever done

Hatch chili time is in full swing. Hatch chilis stuffed with left over grilled ribeye steak and 2 kinds of cheese. Of course wrapped in bacon (3 strips per pepper) and basted with sweet baby rays. Smoked at about 350 until the eyeball and finger poke test said they were done. I love stuffed jalapenos too but this is so much less work and 1 pepper makes a meal with a side or two. (Salad and I made a pot of beans.) Any of you guys have any cool tips or recipes?
