I have a 2003 Mercury on a 19.5 foot Bumble Bee that has is powered by a Mercury 200 EFI. I don't know anything about props. Installed is a Mercury marine High five marine 23p (Five Blade). The boat also came with a Trophy Plus 25p (4 blade). If I switch to the Trophy plus 4 blade what can I expect to be different?

first off, what is current wot rpm, speed.
the trophy will perform better but may be too much pitch depending on what max rpm with the hi 5 are.

Yeah, better the details the better the answer. Any judgement on a prop must be made from a known factor.
That said, high five is rarely your best choice.

if it was my boat I think I would be looking at a 25 or 26 pitch tempest for a 3 blade, that should be a pretty quick hull with either (depending on what the engine will turn)

About all that high 5 is good for is pulling someone in a tube with a few more people in the boat or as an emergency spare prop.

Okay guys. Its a 2003 Mercury 200 EFI. Wide open it will run close to 6000 rpm and in flat water get to 59-60

what pat said, I have a 95 champion 202/95 200xri efi and run a 25. runs 6k and on a good day 65 is wot.
