So the answer is that the fighters are losing "water weight" to make weigh-in, then they put back on weight, but it's mostly water.
It does sound unhealthy.
When I watch UFC fights, I usually watch the weight classes and say to myself, "Yep, that would be my weight if I was ripped and lean, but that is for my normal walk-around weight.
My normal weight now is about 177, and I'm lean and in decent shape.
If I was to get ripped and train, I'd probably fight at 165-170 or so, but that would be lean weight, NOT "depleted of water weight."
If I did that, I'd probably fight at 155.

Many moons ago I was a boxer, I can remember going by the Cleaners and getting those thin plastic bags to wear under my clothes, I remember going to sleep in a sweat suit with the plastic liner on, it sucked trying to make a weight class when you were 14-16 years old and growing like a weed.

Back before the motor crapped out on my boat I used to fight a few fish in the lower weight classes plus 51 yrs into marriage so there's that fighting career I have going too...
Tickled as a pup with a pork chop plenty of the time

What I was wondering was about "weight" before and during the fight.
A fighter has to workout, train and diet to make his weight, let's say 165 lbs.
Right after the weigh-in, do fighters then eat a lot of healthy food, but bulk up before the fight, thus adding 5-20 lbs., or whatever, and now he's up to 180 come fight time? Clearly they do not get fat and out of shape in one day, but do they weight a lot more than the day before?
...------ Watch Kingdom on Netflix (the one about MMA, not the medieval one). It’s a good show in general (you may not like the language or sex scenes) but they show weight cutting and what all goes into it.
