The best brisket I ever ate had a super thin bark. It was way before the days of competition BBQ and the barking craze. I'd eat it weekly for years, I really miss that place.

The last 10 years or so the bark has gotten out of hand, the bbq of today is not the bbq of my youth.

Lol I'm 49 so not quite. The problem with the stuff lately is you are still tasting it 2 days later. Smoke and pepper overkill. Its damn near universal now.

Good lord bbq is an art form,if you dont like the smoke flavor,smoke ring or complex rub profiles just throw some salt and pepper on it pop it in the microwave or sous vide machine and eat your McRib sammich.
