Slight dilemma. Need to smoke my brisket. I’ve done a nice brisket on the offset smoker, but at my son’s house he has a Traeger that I could use. Problem is I have other stuff to do as well. Should I stay home all night and man the offset or take it to my son’s house and set it and forget it or stay home, drink beer all night and leave the other chores alone?

I dont have a pellet cooker and use offset for everything. That said, if you or son are comfortable smoking brisket on the pellet cooker I say go for it.

Man up and do the offset. I will be up every two hours tonight checking mine, doing a brisket and two pork shoulders. It is a pain in the arse but that’s part of the fun of cooking good barbecue.

Depends on when you need it ready...

I need mine ready for lunch tomorrow, and its raining today, so glad for the rain. I'll be cooking tonight, and looking forward to it. Several in the hood will be doing same, so it might just be a party night!!!

Well I’m putting it on the offset smoker. Should be on at 10 tonight. Waiting for the temperature to come up. No breeze is a small battle.
Have the beer at the right temp.

The offset will yield a better result with the smoke flavor. Pellet grills will cook fine & the brisket will be good, but not as flavorful as the offset smoker.

Holding steady at 225 degrees and brisket up to 151. Passing time with The Twilight Zone on Decades. Time for another beer. cheers

Rain stopped at noon, so I got um going around 1:00 PM. Finished mine about 11:30 last night. Some started early, some started later, but they were still going when I finished up. Good neighborhood to live in.
