Thawed one of my on sale briskets. Point got done 1st so I had to slice it off and put in ice chest wrapped up. 1 hour and 15 minutes later Flat got done. 2nd time in my life I had to do that.

Rested them about an hour and a half and sliced em up. Wife and son loved it. Hadn't cooked one in a year or more.

That looks good. By that pic/cutting....looks like the Point was sliced wrong.

I`ve looked at it closely and I have to agree. Cut across the grain. Looks as good as any brisket I`ve ever cooked. bow_down
