Had a smoker all my adult life and they have always turned out good . Just got into using a Weber Kettle grill . I just broke down and got a Weber Performer and all the extras that come with it . Love Weber . Got the charcoal trays , [Linked Image]
pizza stone , vortex , ect . Getting a slow n sear and my next will be to smoke a brisket on it .

That’s how I learned. There are some crazy BBQ approaches out there. Keep it simple and pure. Aaron FRanklin does it that way.

The wife wanted to go a different direction so that’s what we did. B&B lump to start with, pecan to smoke with. [Linked Image]

I’ve always held Coopers in Mason as a top of the top joint. It and Louie Mueller in Taylor as two true masters of their craft. Fishing partner was in law to Cooper, and another was brother to pit man at Mueller. Surprisingly similar methods. Neither would remotely qualify as low and slow. Lots of salt. Direct wood heat and wrap at least half the cooking time.

Any one been to Old 300 BBQ in Blanco? Had a customer tell me he thought he was cheetin on his wife when he went there cause it was so good. Don't know nuttin about it just a rumor at this point. Always like to see more then one opinion before I take a road trip.

I have the Performer Deluxe...best Weber grill I’ve ever owned. It’s basically same as yours but uses gas to start the charcoal. Attach a Coleman 16oz propane canister, hit the button and let ‘er go to town.

Agreed, good place to stop driving up or down 281. Wouldn't make a special trip for it but it's the best bbq/food between Bulverde and Marble Falls.
