I have a 2003 Yamaha VX200 (0X66 Vmax) that I am trying to hook up to a NMEA interface cable for my HDS7 gen2. I bought the Lowrance 120.37 interface cable which (after the fact) I think is for the 2006 and newer Yamaha engines. Is there another interface cable I should have bought or a work around I haven’t figured out yet to connect to the engine?

Yes the 120.37 is for 2006 units and newer without commandlink. You would need to check with a Yamaha dealer for earlier connecting if they were even available at that time.
