Here's how I fillet a common carp. It's a bit different than Asian Carp. The flavor is so good, Im wondering why more people don't eat it. Filleting a Carp

Never had carp. Would not mind giving it try if prepared like in your video. Like Mudshark stated. " I will try anything once"!

Nice! I've eaten carp a number of different ways, but for some reason haven't used the scoring method. So I'll have to try your technique next time!
But yes, it's a crying shame that more people don't target and eat these guys. They're missing out, and they're missing an opportunity to improve the quality of our waterways, if only by one carp at a time.

They're missing out, and they're missing an opportunity to improve the quality of our waterways, if only by one carp at a time. Removing carp and Buffalo doesn’t improve waterways. Neither are destructive. Asian carp and grass carp are not the same as common carp. Buffalo are native, and carp have been in Texas water since the late 1800s. Totally viable food source if you want to eat them, but theres no reason to remove them from our waterways because you think it’s “improving them” for no reason.

Good video!
If you want to try Carp for table fare, I have to do my usual PSA and recommend you do so at Joe Pool Lake. You can literally catch them a few feet from any shore, just throw out a few cans of corn, place a few kernels on a small hook and get ready. JP is maxed out with Carp in the 3-10b range and are easy to catch. I would throw back anything 10lbs and over, the smaller fish taste much better.

Buffalo are natives, so I mostly return them when I catch em. The consensus on carp is that they muddy the water, damage aquatic plants, and eat the eggs of native fish. It's clearly not catastrophic, since they've been here a hundred and forty years and we still have fish (and of course most freshwater ecosystems in Texas are highly tampered with and artificial anyways). I'm just saying I get an extra feeling of satisfaction when I murder carp, knowing the world won't miss em. Sweet sweet carp-murder. Hmmmm. https://nas.er.usgs.gov/queries/factsheet.aspx?speciesID=4

I have eaten them since I was a kid. My grandma would make carp balls and deep fry em. They were great fresh but not good at all left over.
