I used to do it on river trips in a dutch oven, always a hit. just do brussel sprouts in about 1/4" of really hot oil in cast iron skillet. food

Like Hop said, Don't cornmeal coat them like you would a crappie.

Just clean out the guts (leave the head, tail, and mini scales on).

Saute in just enough half butter/half oil to cover the bottom of the pan. Squeze of lemon and your done. Peal off the skin and eat it all. If they're small (6") the bones are so soft that you can even eat them.

In My Opinion, fresh trout taste WAY better than anything we have down here in Texas. And I'm a Near-Native Texas.


I'm glad there are wine drinkers in this world ..... it saves more beer for the rest of us.

You are right about the bones, along with bones you would find in say, a bass or crappie, there is another row of small bones in the middle of the fillet. Rookie me tried to cut them out but gave up accepting that I would just have to pick around them but I never did notice them.

Nice feesh,When I lived in colorado I tore them up on a cream rigged earthworm and straight up worms trout are too easy.
