hope you're making sure bait is allowed where you fish, lots of places are no live bait or no barbs or even both. they do taste better in winter/cold water, try just wrapping one in foil with fresh lemon and a slice of red onion, wrap tight and oven cook it, broiled red taters and some fried brussel sprouts. I've seen this done in a dishwasher... no soap of course.
Just want to make folks smile, and spit coffee on their keyboard.

I'm going the broiled route next time. I'm going again this weekend.

Like Hop said, Don't cornmeal coat them like you would a crappie.
Just clean out the guts (leave the head, tail, and mini scales on).
Saute in just enough half butter/half oil to cover the bottom of the pan. Squeze of lemon and your done. Peal off the skin and eat it all. If they're small (6") the bones are so soft that you can even eat them.
In My Opinion, fresh trout taste WAY better than anything we have down here in Texas. And I'm a Near-Native Texas.
I'm glad there are wine drinkers in this world ..... it saves more beer for the rest of us. Hopper

You are right about the bones, along with bones you would find in say, a bass or crappie, there is another row of small bones in the middle of the fillet. Rookie me tried to cut them out but gave up accepting that I would just have to pick around them but I never did notice them.

Family is everything! Life is precious. We don’t have forever. We have now. This moment. We can choose to love our lives now.
