Dock fishing at the office was good yesterday. In two hours James, Don & I caught two buckets full of nice ones. I filleted ten with 5 over 14", rest were 11"-12" .

Grilled a couple for lunch when I got home. If you haven't tried grilled crappie you're missing a treat.
I season the fillets with salt, pepper and Cajun spice , put a small amount of butter in pan ,just enough so they don't stick and heat until the butter starts to brown. Place the whole fillets in and cook until bottom starts to brown then carefully turn over. Only turn once as they tend to fall apart. They cook fast. You can add any seasoning you like; I like a little lemon juice on them....ENJOY

We grilled some fresh caught crappie last night and dusted it with a rub I just found called Boars Night Out White Lightning with double garlic butter and man it was GOOD!

On lower heat with butter/oil in a pan, yeah sauté is a better description. Higher heat in a pan (or cast iron) with butter/oil, "Blackend" is a better description, were you get the caramelization, which is what I did.
