Man it has been a bit, very sorry for my absence guys, haven't been able to get much fishing recently. Missed everyone! I did finally get out on the canals with my dad and we had some fun with Skipjack, so i figured I would try my hand at cooking them up. It was... interesting. I'll let you be the judge!

On some of those "not so popular to eat fish", do you add any seasoning to them or cook them any different than other fish?

@J4MEL Man I'm honored, thank you! We did some fishing up in Central Texas and then did a whole series in Cozumel... I didn't feel like that was appropriate to post in a Texas fishing forum. But man I am back and I am ready for some good ol' South Texas Fishing again!
@Laker One I can't tell you how much that means, thank you! I try TONS of recipes with the 'not so popular' fish. Some of them work real well; smoked menhaden (or anything) in a brown-sugar bourbon marinade was surprisingly good. Most recipes will hold up with most kinds of fish, but my thought is that you gotta get the initial cooking down better on some rather than others. Afterwards you can mask the flavor all day long with buttermilk, sauces, marinades etc.
