Marlin
Marlin fishing has pick up a little this last week, lots of fish slow to bite, best action this week at the 95 spot and the 1150 most caught on lures, few on live bait. Water starting to warm up.
We caught 1 marlin on Monday, 1 on Tuesday, 3 on Wednesday and 2 on Saturday and 1 on Sunday.

This week a few sierras at El Tule and Santa Maria, fishing has been pretty good this week, things should start picking up, warm water on the way slow.

Jc’s Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. Jerry, explains that his charter business is geared more for families and novice anglers, making sure everyone who charters a boat with him have a great time and lots of fun. We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well let’s get on with the fishing report for this past week.

WEATHER: The outlook for Cabo San Lucas in the two weeks ahead shows the average daytime maximum temperature will be around 26°C, with a high for the two weeks of 30°C expected on the afternoon of Saturday 20th. The average minimum temperature will be 16°C, dipping to its lowest on the morning of Saturday 27th at 14°C. The next 14 days will remain predominantly dry. On the whole winds are likely to be moderate.

FROM THE ADMIRALS KITCHEN!
Skipjack Tuna Steak with Japanese-style Sauce

INGREDIENTS
Steak 200 g Skipjack Tuna Fillet
Salt
Black Pepper
Sauce
1 1/2 tbsp Soy Sauce
1 tbsp Mirin
1 tbsp Black Vinegar
1/2 tsp Grated Ginger Root
Other Ingredients
2 Garlic Cloves
Spring Onion Leaves chopped
Vegetable Oil
Side Vegetables
Baby Spinach or watercress
Mizuna Greens substitute: any leafy vegetables that have a mild flavor
Cherry Tomatoes
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

INSTRUCTIONS

1. This is skipjack tuna also known as katsuo in Japan and it is the main ingredient of katsuobushi, bonito flakes. Lightly salt each side of the sashimi-grade fresh fillet. And sprinkle on the black pepper.

2. Next, slice the garlic cloves with a mandoline slicer.

3. With a bamboo stick, remove any sprouts since they easily burn.

4. Now, heat a pan on low heat. Put the sliced garlic cloves into the pot and add the vegetable oil. The garlic easily burns so take extra time to saute it until golden brown.

5. When the moisture is removed, it becomes crunchy. The garlic chips also go great with beef steaks or salads.

6. Now, it is ready. Place the garlic chips onto a paper towel.

7. And now, bring the heat to medium high. Place the fillet into the heated pan.

8. Using tongs, flip the fillet over and saute on each side.

9. Brown the skipjack tuna for a total of 2 to 3 minutes. Cook until desired but we recommend making it medium-rare.

10. Remove and place it onto a cooling rack.

11. Let's cut the fillet. The thickness should be about 1 cm (0.4") or slightly more. If the cuts look too rare, you can cook the fillet again.

12. Place the slices onto a plate along with the side vegetables. Top with generous amount of chopped spring onion leaves. Crush the garlic chips and then distribute.

13. Next, let's make the sauce. Heat a pan and add the soy sauce, black vinegar, mirin and grated ginger root.

14. Stir to combine and bring it to a boil. When making the sauce, be sure to clean the pan beforehand otherwise the remaining tuna oil may give it an unwanted flavor.

15. Ladle the sauce over the tuna steak.

RECIPE NOTES
The black vinegar is milder than rice vinegar and it adds a refreshing taste to the sauce, making the steak more delicious.
Skipjack tuna in season contains relatively less fat so be sure not to overcook it otherwise it can easily become dry and tough.


COCKTAIL
Long Island Iced Tea

Ingredients
1/2 oz. vodka
1/2 oz. gin
1/2 oz. white rum
1/2 oz. silver tequila
1/2 oz. Cointreau
3/4 oz. lemon juice
2 tsp. simple syrup
3/4 oz. Mexican Coke

Instructions
Shake ingredients (except Mexican Coke), then strain into a Collins glass over crushed ice. Top with Coke and garnish with a lemon twist.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
