I'm looking at used inshore boats that come with 250-350 hp. Most come with either the Verado or Yamaha. A Few come with a Pro XS 250.

I've seen enough Yamaha's used in saltwater that I know they are very well received. But I don't know enough about the Verado's. Are they even making them any more? What I like about the Verado is the fly by wire controls and the vessel view display.

If I had my druthers I'd order one with a Suzuki but again, I'm looking at 2-3 yr old used boats so I don't get to be as picky.

Yes, Mercury is still making the I6 Verado's for now but will most likely be phased out in the next few years with the V8

Want to see what lives the longest? Look at a crabbers boat, those guys run the guts out of their motors.
Most of the time you have to scrape the slime off the cowling to see what it is.
You'll never see a verado.
You will see Yamahas and Zukes, probably 60% Yamaha.

And since the Verado is being replaced by the new four stroke, five years from now parts might be scarce

It all depends on what Yamaha engine you are looking at. If it is an earlier Yamaha SHO model I might think twice about it. My friend just lost his power head with a little over 300 hrs on it. A 2014 yr model. If you go onto the Yamaha forum on Bass Boat Central you will see several people post with the first generation of this engine they had blown power heads. Yamaha never admitted they had a problem but several of the people posted that they replaced their power heads as a "good will" gesture. But if it is a F series Yamaha they have been proven to be just about bullet proof. I would also check on the Mercury forum about the Verado.

"Inshore" is a broad term. Are you looking for a flats type rig like Shoalwater or Shallow Sport? Or a V hull like a pathfinder? If it's the flats rig, a Yamaha with TRP is a great setup.

V hull like a Pathfinder, Sea Hunt, Key West, etc.

I’ve only seen and would only be interested in the F series Yamahas.

One other question I have is since I’m having a real hard time finding the boat I want with a T top, can I add a fiberglass or canvas top later or is it constructed differently coming from the factory? Seems like there would be more to it than just bolting it down to the floor after production.

Not really.
There's multiple aluminum fab shops that build T Tops, K Tops, towers, whatever you want. Any you see is aftermarket.

I have a 2013 250 SHO with 440 hours getting the powerhead replaced right now..................
