every time i can salsa it gets dull. any suggestions

What's your acid you're using and how much? Vinegar, lemon/lime juice, citric acid? Ph strips are your friend. You need to be at like 4.5 or lower depending. Wondering if you Ph is a tad high and affecting the flavor. Lots of spices will change over canned life too. But acid/ph is the first thing I would check.

Cooking the salsa and water bath canning?

I make fresh a little over a pint at a time. Lasts 2 weeks in fridge but it is normally gone by then. Homemade is only way to go. Less then 1/2 price and tastes so much better. Once I started making homemade there are very few store bought brands I actually like.
