I normally just sow them in the ground after I pull my green beans. They love hot summer weather as in 80 degrees and above. It's the most hardy plant in the garden for Texas Heat.
Keep you seeds in the freezer, till you are ready to plant, rough them up in between some sand paper, soak them overnight and plant them about 2" deep, water them good at least every other day and they will take off in two weeks, once they get up to about 24" tall you can quit watering and they will grow till frost.

You could try and start from seed once you are sure there is no more frost. The problem with transplanting anything I think is the plant goes thru a shock once it's transplanted and it kind of goes dormant. I'm sure this is because it's trying to establish its root system before it gets tall enough that a 25 mph wind will just blow it over. When I transplant tomatoes and peppers I put a coffee can around them so it keeps the stress off the stalk till it gets up tall enough, then the tomato cages go down. The tomato can also helps repelling cut worms and its a gauge I use when hand watering, I just fill the can till it's full, I'm not watering the entire garden thus promoting more weeds to grow.
