I might not be able to catch those big toads like some of you (YET), but I know what to do with the eaters! With a 20 yr old and 14 yr old boys at home, Momma better get a plate fast. She can tell me fried food is bad for me when she is done eating. LOL. Enjoy! I use Louisiana yellow box, crispy chicken breader, and add just a little Slap Yo Momma in it. Coat the fillets in yellow mustard, then into the breader mix in a bag. Shake good, and then shake most of the breader off. This is a flour based breader, and leaves just a light coat. I prefer this to corn meal. Cool the fillets before cooking, and 375 degree peanut oil. Cool fish and hot grease = crispy fillets.
Everyone has a favorite, but this seems to be the winner for my family. I don't like a heavy batter, just a light crispy coating. More or less Slap yo momma depending on your preferred spice level.
I have tried multiple brands and prep methods, but this one is good and easy. This also works well to prebread and freeze the fillets. Because it is such a light coating of breader, it cooks up crispy even from frozen.
