My absolute favorite oyster eating experience is to travel to my cousins house on Hood Canal in Washington. Stick some lemon wedges in my shirt pocket and a shucking knife in hand. Go wade in at low tide, pick oysters off the gravel beach, shuck, squeeze a bit of lemon juice and eat. They don't get fresher than that. Heaven! Oysters and clams have the deep, briny smell and taste of the sea.

Finally found something I can agree with Scagnetti about.
The solution to any problem - work, love, money, whatever - is to go fishing, and the worse the problem, the longer the trip should be. --John Gierach

Finally found something I can agree with Scagnetti about. We’re both dog lovers aren’t we? You’d like my German Shepherd, his name is Karl Marx.

Scags, what's the difference in East Coast and Gulf Coast Oysters or is there.
Last time we were in New Brunswick we went to the Atlantic coast and in some of the shallow bays there were miles . . . errrr, kilometers long of oyster farms using wooden boxes. Never did get the lowdown on it.
Advice? Wise men don't need it. Fools won't heed it.

Yes, big differences in the types of oysters found on the different coasts. Gulf oysters are typically bigger and less firm than cold water oysters from either the East or West coasts We’re fortunate in both Texas and Louisiana to have access to reasonably priced oysters whereas in other parts of the country, even local oysters can be very pricey
