I'd use it but would probably go for a bisque also

i think it would fall apart. maybe add it in chunks about 15 min before serving and don't stir. i know that redfish in a courtbullion is treated that way.

On the coast I sometime use redfish cut up to small cube size. Instead of stirring the pot after I've added the fish, I tilt it and swirl around. That way you don't tear /shred the cooked fish. Tight lines

After spending a small fortune for crab meat in my last Gumbo , I am thinking of using crappie in my next one, If I do , I will just sauté the crappie in a skillet with a little olive oil and Cajun seasoning. Crumble the crappie fillets into the gumbo in the last 15 minutes of simmering.

Back to the sand bass, I know of people that cut in strips, boil it like shrimp in crab boil.
Dip in cocktail sauce, I have not tried, they claim it’s good.
