Roux could have been darker, but flavor is excellent. Not as good as Prejean’s , but close.
2 lbs shrimp, 1 1/2 lbs andouille, one pound crab..

I like my roux about the color of dark chocolate. I throw in couple can of oysters also

Sometimes a light roux is good. As long s you cook out the raw flour taste all is well.
I'm reheating a pot of gumbo now,
BTW a light roux thickens dishes easier than dark.
