What happens if one (or both) teams has some test positive on Monday or Thursday? Do they have Tuesday night/Thursday night football?

There are several factors. They have slipped Sunday games to Monday and Tuesday already and rearranged the schedules of 9 teams going forward. They have exposures/tracing monitors on the players and staff so they know who the infected comes in contact with and for how long and distance. Then they do some math to see if they need to delay a few days to check for a certain number of new cases.

They need to revise the schedule and make it a shorter season or add an extra couple of weeks between regular season and playoffs..
I would almost bet that the Big 10 & Pac 10 call off their seasons before they complete the schedule/season.
The way it's going the SEC may have to pause it's season if they can't get it under control.

Can you imagine having tickets to a game where you are going to fly back to your home the next day and they cancel the game?

The NFL booked the Super Bowl stadium for the first and last weekends in February. That should tell you they expect to make up some games at the end of the season.
