I have roasted pumpkin seeds several ways. I have even built a basket and roasted them over mesquite. I have never thought they were very good. Are there any recipes you like?

I boil them first in a seasoned water then roast or smoke. I've used bbq seasoning and hot chiles in the water. Shell takes on some flavor and the meat has a better flavor as well .

4 Cups fresh pumpkin seeds
3 tbs of garlic salt
3 tbs of Old Bay seasoning
1 tbs of crushed red pepper
1 qt. of peanut oil

Heat oil to 375*
Pour seeds into a deep fryer, use the basket to hold them down
Deep fry 10 minutes
Use a slotted spoon and dip the seeds out and place on paper towel
Season with the spices
Let cool and enjoy

Thanks for both the recipes. I apparently haven't been cooking nearly long enough. I think I will try both.

If you season the water before you boil that flavor permeates the shells . I've done BBQ boil and a spicy coating for the roasting. You can smoke them also after the boil.

Fried sounds great too !

My son cooked his in a pellet smoker, donโ€™t know how long. Turned out great
