Hey fellas, new to the forum.

I'm upset at my self that I just found out about this place otherwise I would of been here years ago!

I went out to lake fork the other day caught a few good looking blue catfish. Got home and cooked them up but I noticed the meat had a yellow'ish tint to it. Is this something to be concerned about? I've never seen any kind of fish have this yellow'ish tint to it.
If it is.. They have already been consumed! food

Are you sure those was blue cat? I've never seen a blue with yellow meat but it is common and normal in channel cat.

Almost every channel I clean has yellow on the back. Never seen a blue with it.

Welcome to the TFF!!!

Hmm, Yes, I think maybe you had some Channels there, as they will usually have portions of meat that are yellow compared to the rest. But the taste is the same. If it was actually Blues, that would be a new one I have not run into yet. Perhaps it is as someone mentioned aleady, fat content. But if so, it may make the meat taste strong, such as the belly straps will sometimes taste (if not prepared properly).

You might want to check my Catfish Calendar out, if you are an avid catfisher.

We trim all yellow meat and lateral lines from any fish we clean on our guide trips.

I have, on any Blue over 4 or 5 lbs I've caught from Aquilla and Ray Roberts both. Anything over about 8 lbs, I throw back. I cut all the red meat off, but leave the yellow meat.

Figured it was fat, had another buddy tell me the same thing I just wasn't quite sure since he isn't the most reliable source haha.

The flavor is fishier. If the peeps eating it prefer bland, white, flakey meat, trim it out.

It's not bad - just more full bodied fish flavor than most American tastes prefer.

If you trimmed all the yellow meat from the majority of catfish I've caught over the years, you would have nothing left, and not worth the effort of cleaning........It's fat, and the more food in a certain lake dictates the color of the channel cats fillets.
I'll sometimes soak them in milk overnight, but most of the time they go right into the hot grease, and turn that yellow into a golden brown!
