I typically do 3 months. But nothing wrong with 2 weeks. I feel I get a better flavor profile on the longer ferments. Done some where I added toasted oak wood chips to the ferments. Those turned out good. And I like to buy Culturelle Probiotics capsules. Separate the capsule and add the powder to your mash at the start. It really kicks the fermentation into high gear.
