My father's commercial chili con carne recipe he cooked for many thousands of people commercially at fundraisers, events, socials, organizations etc. Quart & 50 gallon versions. Recipe ingredients & directions 1. 2lb hamburger (80/20) 2. 1/4 cup onion 3. 2 cloves garlic crushed 3. 3 tablespoons chili powder 4. 1 teaspoon oregano 5. 1 teaspoon paprika 6. 1/2 teaspoon thyme 7. 4 sweet peppers diced 8. 1 teaspoon salt 1/4 teaspoon black pepper (9 - optional 1/4 cup celery) --- FRY ALL THAT DOWN -- add 1/4 cup water if necessary to not burn chili powder. Once fried down & vegetables soft ADD: 1 14 oz can kidney beans -- 1 16 oz can refried beans (thickener) -- 1 15 oz can tomato sauce -- 2 tablespoons tomato paste -- 1 tablespoon Worcestershire sauce -- 2 teaspoons molasses -- 2 bay leaves -- BRING TO BOIL & simmer 20 minutes minimum. This chili con carne recipe makes 2 quarts. FOR COMMERCIAL RESTAURANTS OR FUNDRAISING EVENTS, MULTIPLY RECIPE INGREDIENTS BY 100 TO MAKE A 50 GALLON VAT. Hope you enjoy this.

Looks MIGHTY GOOD! Ill will defiantly give it a shot. Thanks BAF & BT - my Dad was in demand for that an pancakes (two extremes I suppose). He was constantly cooking one or the other for the organizations. I recently came across his Swedish buttermilk pancake recipe and I'll post that one too when I figure out how to reduce it. I can remember as a kid them dumping 50 pound sacks of flour in a barrel and mixing. They were kind of a pancake and kind of a crepe, very thin and light.
