No wrap on grill
Wrap while they rest after you take them off the grill for 45min or so....always pull the membrane this way

There is another way to do it with membrane on but that’s another post...

If you're wrapping and the ribs fall apart or get soggy they're wrapped too long. Look for about 205 temp between the bones or the bones just start popping through on the back and you'll be fine. A fall apart rib is overcooked, they should have a slight tug to be moist in the middle.

I marinade(4 hours) and rub, then smoke mine unwrapped with heavy smoke for 2 hours. then I wrap, smother in butter, brown sugar, and rub... cook for another 2-3 hours (200 degrees)

That's what I do. Hit 'em heavy with a good rub, put 'em in a tin pan and add some apple juice. Cover tight with tin foil and put 'em on the grill for about 1 to 1.5 hours at 250-300. Then I take them out, sauce 'em up and put 'em over the hot coals, with off set smoke going strong. Turn 'em every 15 minutes caramelizing the sauce. I cook them until the meat starts to draw back on the bone.

I wrap briskets and pork butts but don't wrap ribs. I use a sweet glaze that just seems to work better unwrapped.

Rub, sear, wrap until bones pop, add brown sugar and finish uncovered.
