We are going to Cancun in May, we are considering a fishing expedition Is it possible to keep the fish and ship home?

Enjoy your trip. Cook some fish on the beach and share your catch. Don't waste your time trying to get frozen fish home form Mexico.

If you book a trip . get references on your captain.
One of my worst experiences ( when I was younger and dumber ) was a fishing trip out of Cancun. We went maybe 1000 yards off the beach ,
turn right and did a slow troll for half the trip , turned around and trolled the same waters on the way back. The crew did not speak much english ,
but let me know that all fish caught were property of the boat., I could buy some for supper if I wanted,
I told them no thanks. They ask for a tip , I said you sell the fish.

Only trip I have ever made that I did not tip the captain and/or crew.

I am no expert . but have made trips to Costa Rica , Belize , both coasts of Mexico, and many trips to Florida from Ft Lauderdale to Key West, and have found the more touristy the area ,
the more likely you are to get a boat ride instead of a fishing trip if you don't do your proper vetting of the Captain.
Never book a trip thru your hotel or cruise line.
