I have already posted in the Kayak section but wanted to get a few more responses about what brand or brands of Kayaks you prefer? I have been looking at Old town but they are very expensive. I know that the product is good but are there any comparables?

I like the Old Town Sportmans Line. Paddle, Peddle and Trolling motor options. Stable, well built, solid and comfortable seating. Good customer services if you ever need it. Will hold their value too.

Skeeter males the best boat on the market!
I know this has absolutely nothing to do with you question but I just wanted to be the first to throw random stuff at your question. Good luck with your selection, I know nothing about yaks.

Pedal drive ones aren’t cheap. I like the Wilderness Systems Radar Boats.

Hobie PA12 is what I had and Hobie is hard to beat but there are several really good pedal drive yaks on the market today. Native Ocean Kayak Old Town Wilderness Systems If you are on Facebook there are a couple great groups to join and ask around. I am sure you could find someone near you with almost any of the ones you might be interested in that would let you take one for a spin.

Too many variables. What’s best for one person, might not be best for someone else. Your height, weight, the type of vehicle you drive/availability of a trailer are things to consider. The bodies of water you like to fish are a key factor. I have two Hobie kayaks. The mirage drives (other than the 360) do not do well in stump fields. Other drive systems retract or elevate if they hit a subsurface obstacle. On the other hand, the Hobie mirage drive performs much better around subsurface vegetation relative to others.
Considering that there are many high quality pedal kayaks, the best one may be what you can find at the best price.

EVOKE BreakawayThere are a ton of variables to consider but if price is a big factor Evoke has an entry level pedal yak at about $1k - $1,200. I found one on Facebook market place recently that had been used 3X supposedly without a scratch. I passed on it just because of how far away they were but all the reviews and vids I have watched are positive.

Not uncommon to find a used pedal drive boat for under $2k. DFW Kayak Fishing Group on FB has a large following with several pedal drives up for sale.

None of the dealers on their website list their brand of kayaks. Amazon, Academy, Cabela’s, or Dunham’s. Pelican has a Hobie-ish stylish pedal drive that is more affordable, but if requires turning the entire unit around to go in reverse.
