I know there are variables but I was wondering if money were not a problem what brand and model kayak would you buy and why?

I’d get 2. A New Hobie Outback and a Hobie Revo 16. One for all around fishability, one for touring/kayak camping fishing trips.

The correct answer is you would buy the one that fits you best, which means trying them out on the water. Like buying a truck, “best” is subjective and depends on your needs and style of fishing.
The new Hobie PA has some really awesome features, particularly the retractable transducer mount that allows you to use side imaging and if you hit something, it goes back into the hull, which is supposed to protect it from damage. I’m also interested in how the ability to pedal sideways will go.
All that being said, I have an Old Town Topwater 120 PDL and I love it. It’s not the top of the line, but it fits my needs and I like the instant reverse the PDL offers. Dan90210 has an older Old Town Predator, which is their top of the line PDL boat. It’s bigger than the Topwater.
There are a lot of solid kayak options from several manufacturers. Do your research and determine your needs, then go test them out (retailers have demo days occasionally).
If money weren’t an option, I’d look at the new Hobie PA really hard because of the ability to have side imaging without hanging the transducer off the side of the boat and to be able to pedal any direction.
