Looks good but you may have too much charcoal in there for low and slow. When I smoke in my Weber i like to use a Char-Basket. It lets you keep your fire contained and makes it a little easier to add wood for smoke or charcoal for heat. And if you set it right beneath the fold up grill wing it's simple. I do ribs pretty regularly

I also have the rotisserie set up and that's fun to play with. A couple years ago I smoked some Cornish Game Hens with it. and I have done several standing prime rib roasts. It seems like a big up front cost but you will find yourself using it more and more.

Might also should check out the Slow-N-Sear. Somebody mentioned one a while back when I first started with the Weber. Pretty nifty little tool.

They have the Char basket at Lowes.

I use one and only use 26 coals when I do baby back ribs. The amount of charcoal will cook ribs for 6 hours at 190 degrees.
