Probably I shouldn't call it a recipe, as this fish tastes so good with any method. I'm not going to lie, the california sheephead I used in this video tastes slightly better than those I caught in Houston, but it's more fun to catch sheephead back in Houston thanks to the great numbers.  Due to its size and the thickness of the fillet, we had to improve the way to steam it. It's not the authentic way any more, but it's the best tasting way to steam it in our experience!
