I don't know about Napa specifically but the Czechs here start their regular cabbage early around February. They pick them late June and make sauerkraut. They produced heads that were about the size of basketballs this year. Cabbage can handle freezes no problem. So the sooner the better to get them planted in mid/late winter.

Go watch Hollis and Nancy's homestead on Youtube. That dude can grow anything. His wife is Korean, so they grow a lot of Napa for Kimchi.
