I've got a champion 210. Rating plate says 6 cylinder. I'm thinking about upgrading to a 4 stroke which will be an 8 cylinder. Tried to search but found nothing. I'm sure this has already been vetted. Can anyone help?

I've always thought that boats were rated by HP, not number of cylinders?

Correct. There is a standard equation that is used to determine the max HP. Cylinders has nothing to do with the HP rating to my knowledge.

The coast guard ONLY rates boats 20' and shorter, it's a mathematical formula: length X Width doubled, minus 90. In feet. Over 20' the manufacturer can put whatever rating plate they want, but it's not a Coast Guard rating.
The Champ V6 rating was virtually a unlimited rating, since there weren't an V8's on the market. There are some 300 Rating plates for the 210 running around, might check with C&O and see if they have one you can swap.

It was just Champions way of saying no HP limit. It's over 20' so not limited by USCG.

Yep, back in the day some boat manufacturers just put "Any V6"... Do what Pat suggested... Dan
