I went to a crappie fry at a friend's house yesterday. As he was making a mess with the dripping batter and splattering oil, he asked how I cook my catfish. I told him that I often stir fry catfish. This method is quick, easy, and less messy. Small chunks of catfish will stay together firmly, unlike crappie. I like to start by sauteing onions while carrots and broccoli are steaming. Add the fish to the skillet and spread the pieces around to cook evenly on each side for a minute. Add the steamed veggies, soy sauce, mirin or white wine, pineapple, and spices such as garic, paprika, and ginger. Serve over rice or ramen noodles.

My Vietnamese fishing buddy told me about his favorite catfish recipe called Cá Kho Tộ. Looks interesting but I have yet to try it.

Well, I googled Ca Kho To and learned it is a braised and caramelized catfish dish. It sounds pretty good.

Lake fork guys YouTube channel recipe. Coat fish with Frank's hot sauce then put flour on them and put them in the grease. Now my grandmother would never cook fish without corn meal and I would not if I had not seen it on lfg YouTube channel. The fish was crispy and crunchy. I cannot say I don't prefer corn meal but if I run out of corn meal I will never run out of corn meal and flour at the same time.

Well, I made a catfish coubion last night which was very tasty if not authentic. I sauteed chopped onion, bell pepper, and celery in the electric skillet. Then I added small pieces of fresh catfish to cook on each side for a minute. Next I added vegetable stock, a small can of tomato sauce, and a can of V8. A few sprinkles of garlic, cayenne, thyme, and paprika seasoned it nicely. Served over rice in a bowl with cornbread, it made a delicious dinner.

We made a catfish teriyaki stir fry last week. Chunked up carrots, celery, onion, fresh jalapeños and a bell pepper. Sautéed in cast iron with olive oil. Added preseasoned catfish chunks when veggies were almost done and seasoned with teriyaki sauce and hot chili garlic paste, just stir to coat everything and lastly added a drained can of pineapple chunks. Served over sticky rice with a dash of shoyu sauce. It was outstanding!
