experimenting. soft boiled egg wrapped in deer/pig sausage, wrapped in mozzrella, wrapped in pie dough. good eating, but a few problems. dough slid down the sides on all but 2. too much ground clove and sage, but plenty good enough to eat. wife will make some good ol bacon gravy in the morning to ladle over em. Looks good. I wonder if mixing shredded cheese in with the meat would help prevent the crust from sliding down?

i did some googling around and found a wellington meatball that put the cheese in the middle of the meat. think i'll go that route. i do a sausage ball thing with sausage, bisquick and grated chedder cheese and its pretty good, but the cheese doesn't stand out too good. the kids love the sausage balls for boat food.

Add chopped jalapeño to your sausage balls. Much better.
