Black pepper and cajun seasoning on both sides place on electric grill with a cooking sheet at 400* turn after 3-4 minutes...then eat.

Here is one we do a lot: - Preheat oven to 350 - Take some mayo, and thin it down with lime juice until it is about the thickness of ranch dressing - Take your favorite flavor of potato chip...and crush a bunch of them up in a bag - Dip fillets in the mayo, and then shake in bag with chips to coat fillet - Bake until chips just start to brown Just change the chip flavor to create new tastes

Soak in heavy whipping cream with a tablespoon of worchestershire, crush up some crackers in a baggie with some salt, pepper and ranch dressing mix (the mix not ranch dressing), add about a half cup of fresh grated parmesan, toss a few filets at a time in and coat well with cracker / parm mix then lay on cookie sheet and sprinkle some more parmesan on top of each filet, drizzle with melted butter and put in oven at 300 till it starts to brown. great on most fish and chicken too.

This is what you need for Cajun seasoning. Don't over do it, it can be too spicy.
