As much as I like green chiles and meatloaf, I thought it would be a great combination to try. I thought it would be unique until I googled it and seen a bazillion different recipes for it.

Used my own and we're having it tonight. Have you ever made it?

Many times with hatch peppers

That was my first thought too. Roasted Hatch mixed in would be great. I love the Hath flavor but it's a bit too mild for my liking. I would mix in the hatch and a Scotch Bonnet or Habanero minimum.

I've always used green bell peppers, but the Hatch peppers sound really good. I'll have to try them when they come to market. They have the perfect amount of heat

sounds good. i think if i tried it i just might cook it on the smoker/grill.

I wish you all had access to the many chiles they grow in Colorado. Mosco or Pueblo chile would likely meet your wants Derek.
Hatch are generally just a generic name for Anaheim chiles grown in Hatch. They grow many types and some are quite hot.
We get fresh Colorado grown chiles at our farmer's market, they roast right there and you can get whichever heat you want.
I buy a couple of roasted bushels every year, clean them and freeze for use all year.
I use green chiles instead of bell peppers in all my cooking.

A friend was in Truth or Consequences recently, having a massage, and the masuesse(?) told him that most of the Hatch pepper growers had switched their fields over to legal marijuana crops ! Hatch peppers may be scarce soon. ..............IslandJim.........

That is my go to dish every time I go to New Mexico. Hatch chili meatloaf.
