Ok guys I'm tired of dull knives. I have bought Bubba blade- junk, dexter knives- won't hold a edge, Rapala knives are ok but dull out. What is a good electric knife to use? I only fillet crappie. Got 10 fillet knives none will hold a edge.

There was just an entire thread on this very subject.

The Rapala Ion with the American Angler Saltwater Blades.

It has to be the Rapala Ion....they have several electric knifes by Rapala.

The Rapala Ion is the only one I'm backing.

It's cordless. And I use the American Angler Saltwater blades.

I'm currently using the Titanium blades.

May be user error. I use a 9" flex Bubba Blade and clean 100-150 fish per sharpening. Been doing the same thing with the same knife since 2013.

Now for my guided hunts, the 5" lamb skinner from Victorinox is unbeatable.

I have a cheap Browning filet knife. It gets a great edge, but to be honest I prefer it once the edge isn't shaving sharp. The thin blade cuts through the meat well, but I find if the blade is too sharp (on any filet knife) it digs into the bones. I like a sharp but not too sharp knife. To me the best thing about the Browning knife is the handle. It's very comfortable to use so filleting a lot of fish is more tolerable.

Edit: most filet knives (being a thin flexible blade) aren't going to hold and edge well. High carbon steels and similar steels that hold an edge well are more brittle and don't do well with flexing.

How do you sharpen them and what degree bevel do you use? A major problem is that people put TOO fine of a bevel on a blade. The finer the bevel, the more fragile the edge, so the quicker it dulls. You're cutting through bone; trying to do it with the bevel on a surgeon's scalpel isn't going to work no matter the quality of the material used for the blade. Use a sharpening system that controls the bevel and choose a "utility" angle and you'll suddenly have a knife that holds the edge.

Rapla HD at academy be sure its the HD idk about the others they weren't good in the past, I have tossed all my Mr twister reg and SW version since I have found these.
I'm sure the ion is good as well but battery products aren't always up to the task for me.

You can sharpen electric knife blades with a small diamond rod or ceramic rod. like sharpening a chain saw blade
I actually mostly use the rapala red plastic one that comes with a lot of regular Rapala filet knives. It has the two little angled ceramic rods that form a V at the bottom.
Just slide each serrated blade through there a few times both directions and you'll be surprised how much better they cut.
I been using the Rapala plug in electric lately and pretty happy with it. They quit making my favorite electric which was the original American Angler.

I know they are cheap but i like the mister twister electric knives. I have been wanting to try out one of the cordless ones though.

Blades get dull.

I have found the best combo is the Bubba Blade electric with the cheap thin mister blades.
The blades flex and are sharper than any I have found. Very thin so wastes little meat.
And when they get dull after about 500 fish buy another set of blades at Academy for 10.00.

The brand name does mean something to a certain capacity, but I think it's more important to look at the components of the knife. Most of the knives you mentioned are stainless steel or German steel. Whether it's one brand or another, if they use the same material nothing is going to change.

You mentioned the knives won't hold an edge. A blade I've found to be far better quality than any of the German steels or stainless steels is VG 10. It's what most of the professional chefs use. It holds an excellent edge once sharpened and is also corrosion resistant similar to stainless steel. That being said, it is still prone to surface rust like stainless steel is so you definitely have to wash it after you use it if exposed to saltwater so it doesn't accumulate any surface rust. Putting a drop of two of oil on a paper towel and lightly wiping the blade down before you put it up will also help it to hold a really sharp edge over time. Electric knives are nice the only downfall is they are more difficult to sharpen. I haven't used the bubba cordless knife but it looks like a decent knife. As long as it can hold a charge for a while it may be a good option. We've used the mister twister and American angler electric knives and both have worked well for us. The only thing I don't like about electric knives is they don't quite get as much meat off the bone as a good fillet knife does because fillet knives do a better job at following the contours of the fish. We usually have to go back with a fillet knife to take off extra skin that the electric knife cuts through too.

Just my $0.02, but based on what you've said I would consider a VG10 fillet knife or mister twister electric knife. The mister twisters are pretty readily available at local shops.
