Fresh out of the fryer I likely couldn't tell a big channel from a small blue, but I prefer my catfish cold the next day. A 2-3# channel cat is perfection. Blues and flatheads just don't taste as well to me after a night in the fridge.

Flathead, Blue, Channel in that order. I donโt clean fish over 7 lbs.
