Which is the best catfish to eat? Blue, channel, flat head? Are the bigger ones better or not?

1.5-2 pound channel is my favorite.

Blue, channels, and flats are all good. Smaller ones eat better on channel and blues for sure. Smallest flathead I have eaten was 28 pounds and it was great and so are 50 pounders. So I am not sure about small flatheads

I like them 3-6 lbs. The bigger catfish are older and been in the water longer so any contaminants in the water the older bigger fish will have more -mercury lead PCB etc. etc. even if the lake levels are within safe tolerance - the bigger fish will have more

1.5-4# blues.
Like stated above all of em have mercury in em and the bigger they are the more they have, Every fish they eat they inherit the mercury from it. Therefore if you think you may be a little low on mercury consume some of those bigger fish. The bad part about mercury is once you get it you got it so eat accordingly.

Flathead is the best of the three. They all taste good though if you cook them right.

I personally like the belly meat of flatheads mmm...mmmm. the best in my opinion, after that channel then blues.

Years and yeas ago my old Daddy told us you can't tell the difference in a small fish and a big fish as far as taste
We had an annual get together on opening weekend of squirrel season and As always my dad caught the fish for the Saturday night fish fry.
I was with him all week catching them and I KNOW he didn't lie because we had 5 fish over 65 lbs ..... ANYWAY .... after the fish fry he asked one of his friends that argued with him did you like the fish ... YES, VERY GOOD! .... what size fish was that? ..... they looked like 4, maybe 5 pound fish! .... My Dad said that we just had a 65# fish for dinner ... and I don't doubt it, because I help clean them.
If you cut the red meat out and rinse the fish real good, you can't tell the difference!
My ol Daddy has been gone for years, and I sure miss fishing with him .....

I prefer channel first and 1-3 lbs . Been so long since I’ve had blues I can’t remember their taste . Flatheads i prefer 1-2 lbs . I have taken any catfish and fill a big wash tub with water and keep them in the a few days with an air pump . Helps with taste not being muddy .

The water they come from make a huge difference to me! But in general a blue under 5 lbs is awesome and a flathead under 15lbs is too. Channel cat I like just over legal size. Meat gets yellow on the back when they get bigger where I fish.

Flatheads are my favorite game fish, I release every one I catch. But I'll take either channels or blues if they are under 5 lbs.
