How do you fix trout?

How do you guys prepare the trout for the able? What do you do abut the bones?

I simply dip em in a plate of regular mustard and then cover em in my favorite fish fry mix. I love my fish "Well Done" so I usually fry em a little more than normal. I have friends of mine that dip em in egg and then the fry mix. Fry them in very hot vegetable oil. Serve em with sliced lemons, tarter or cocktale sauce, along with your favorite sides such as coleslaw,fried potatoes,sliced tomatoes, noodle salad, etc. Side Note: I also love em baked!

What kind of trout? For sea trout or speckled trout the only time I fry it is when we're having a fish fry. It's really good baked or smoked. Season it with your favorite seasoning and let it sit in a zip top bag in the fridge for an hour or so, then put it in a pan or aluminum foil with some butter and cook until IT is 160. It's really good pan seared in olive oil too but it tends to fall apart really easy when you try to turn it over.
You get out of it what you put into it!

Jerry713...I'm asking about rainbow trout I have caught from the stockings by TP&W. My wife wants to pan fry them. I am just wondering about the rib bones. Is it best to remove the back one and then pull the ribs out or can you easily fillet the ribs out? So far I have been pulling the skin off like a catfish and then heading and gutting them.

Banker....I have never used mustard, I have heard all my life of folks using it, do you get the mustard taste or does it cook away?
