I've always liked Sambuca in Plano. American menu, nightly live music. It's usually light jazz or such. Nice date night joint. Anyone that would drive to Plano from Ft Worth just to eat needs a mental health exam.

Now they have opened Legacy West which is a pretty cool place to hang out and eat, shop or enjoy nightly entertainment. Cool area and lots to do

You're in FW. Take her to Capital Grille. Make reservations and tell them it's her birthday. Great food and fantastic service. It's expensive, just like all the upscale steak houses. Order her the bone-in filet. It's not on the menu.

I'd go for the tacos at the truck stop down on the south side of Dallas. She'll never forget it for sure, but you may not be around for the 41st birthday If traffic is bad, take her up to the new Buccee's at Melissa. They've got all kinds of food. I took my wife up there for our 40th anniversary. She hasn't spoken to me in a month.
