Onions hang up and are stored dry.
Garlic is hung up and stored dry.
Ancho (aka new mexico) peppers are hung up and stored dried.
Broth happens when you add water to meat and simmer.


I'm pretty sure they carried canned or tinned tomatoes on cattle drives in the 1800s.
Guess none of y'all olds remember this from your younger days. What did y'all think that canning started in the 1900s or something?

In a separate pot, add 2+ cups of water to boil. When it boils, add your chilies and make sure they're covered by the water, put a lid on it, and turn off the burner. Leave it sitting for 10 to 15 minutes until very soft. Puree the soft pods in a blender.

In a large, heavy bottom pot, brown the beef. Add the cumin, chopped onions and garlic. Cook until onions go clear. Add the pureed pods, oregano, salt and pepper to the stew pot, stirring the mixture well. Cook the chili from 3 to 4 hours over low heat, adding water and stirring as necessary

I'm gonna make a real pot of chili this weekend. It will have venison, TWO cans of rotel, sliced jalapenos, and I may even add a can of pinto beans just to pizz off half the folks in here. Deal with it! food
