REAL CHILI
5 pounds beef cut into small bits. 5 tablespoons cumin 5 large onions, chopped 10 cloves garlic, crushed 10 New mexico red chile pods - remove seeds, stems, and any white ribs. 6 cups beef broth Oregano, to taste Salt and pepper to taste
In a separate pot, add 2+ cups of water to boil. When it boils, add your chilies and make sure they're covered by the water, put a lid on it, and turn off the burner. Leave it sitting for 10 to 15 minutes until very soft. Puree the soft pods in a blender.
In a large, heavy bottom pot, brown the beef. Add the cumin, chopped onions and garlic. Cook until onions go clear. Add the pureed pods, oregano, salt and pepper to the stew pot, stirring the mixture well. Cook the chili from 3 to 4 hours over low heat, adding water and stirring as necessary
That sounds like a disgusting pot of steaming garbage.

I have the confused, basically every single recipe I look up for chili and award winning chili has some sort of tomatoes or tomato sauce in it. do you really think cowboys carried tomatoes or sauce with them on the trail? But they carried onions, garlic, peppers and and broth as Kattelyn pointed out? I kinda see your point but I reckon the recipe has changed a lot over the years since then.

I have the confused, basically every single recipe I look up for chili and award winning chili has some sort of tomatoes or tomato sauce in it. do you really think cowboys carried tomatoes or sauce with them on the trail? But they carried onions, garlic, peppers and and broth as Kattelyn pointed out? I kinda see your point but I reckon the recipe has changed a lot over the years since then. I would say yes (though they had to make the broth or use water).

I put beans in my chili if I want beans, I don't if I don't. I call it chili and it's delicious. If you don't want to eat it then that means more chili for me.
Now the real question is, who puts peanut butter in their chili?

I think I'm going to have to make some 1800's chili to see what this "Real Chili" taste like. Who would of thought, no tomatoes in chili.....

I kinda see your point but I reckon the recipe has changed a lot over the years since then. Onions hang up and are stored dry. Garlic is hung up and stored dry. Ancho (aka new mexico) peppers are hung up and stored dried. Broth happens when you add water to meat and simmer. That sounds like a disgusting pot of steaming garbage. Enjoy your skyline chili you tasteless inbred hillbilly.
