Marlin

Marlin fishing has slowed, to cooler water temperatures, still some striped marlin being caught at the Light House, Rancho Migrino and Los Arcos on lures and live bait.
We caught: 2 marlines on Sunday, 3 on Monday, 2 blue and 1 striped on Tuesday, 1 on Thursday and 2 on Friday.


Dorado

Still good bite at Los Arcos on live bait and lures, best bite is at first light.
We caught: 1 dorado on Sunday, 2 on Monday, 4 on Tuesday, 1 on Wednesday, 2 on Thursday and 1 on Friday.

Tuna

Good number footballs and some nice fish from The Horse Shoe, also off The Light House, about 10 miles offshore on sardines, cedar plugs and hoochies. A few nice tuna caught this week on live mackrel.
We caught: 24 tuna on Sunday, 16 on Monday, 24 on Tuesday, 3 on Wednesday, 20 on Thursday and 19 on Friday.

We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well let’s get on with the fishing report for this past week.

WEATHER: The next 14 day outlook for Cabo San Lucas shows the average daytime maximum temperature will be around 26°C, with a high for the two weeks of 30°C expected on the afternoon of Monday 9th. The mean minimum temperature will be 19°C, dipping to its lowest on the morning of Friday 13th at 17°C. The fortnight ahead will remain predominantly dry. On the whole winds are likely to be light.

Grilled Dorado in a Lemon Butter Sauce

Check out this easy yet impressive tuna confit recipe. Confiting the tuna gives it a lovely melting texture – you can serve the fish warm with green beans and a drizzle of balsamic, or cold as the basis of a superior salad niçoise.


INGREDIENTS

1 pack of Greenfish Dorado portions (1kg)
1 tablespoon Olive Oil
1 tablespoon Butter (melted)
Salt & Pepper
FOR THE SAUCE
6 tablespoons Butter
1 Shallot / small onion (chopped finely)
1 heaped teaspoon of Garlic (minced)
1/4 cup Chicken Stock
2 tablespoons lemon juice

INSTRUCTIONS

1. Preheat a grill to medium heat
2. Place Dorado portions in a bowl and season with salt and pepper
3. Drizzle the fish portions with olive oil and 1 tablespoon melted butter
4. Place the fish on a tray lined with foil and grill on medium heat for about 12 minutes
5. To make the sauce: while the fish is cooking melt 1 tablespoon of the butter in a small saucepan.
6. Add finely chopped onion to the butter and sauté for about 2 minutes or until softened.
7. Add minced garlic and sauté for another minute
8. Add the chicken stock and simmer until reduced by half
9. Add the lemon juice and cook for 2 more minutes
10. Remove the pan from the heat
11. Add the remaining butter 1 tablespoon at a time until the sauce thickens and becomes glossy.
12. Add salt and pepper to taste if desired
13. Pour butter sauce over the fish once ready to serve.

NOTES: It is important not to overcook Dorado. If you are worried rather take the fish out and test it with a fork. The fish should flake easily and still be moist when done.




Easy Sangria:

Embrace balmy summer days with a jug of sangria. With red wine, Spanish brandy, sparkling water, cinnamon and chopped fruit, it's a lovely sharing cocktail

INGREDIENTS:
2 oranges, chopped
2 pears, chopped
2 lemons, 1 chopped, 1 juiced
200g red berries, chopped (we used strawberries and cherries)
3 tbsp caster sugar
1 tsp cinnamon
Ice
750ml bottle light red wine
100ml Spanish brandy
300ml sparkling water


DIRECTIONS
1. Put the chopped fruit in a bowl and sprinkle over the sugar and cinnamon, then stir to coat. Cover and leave to macerate in the fridge for at least 1 hr, or ideally overnight.

2. Fill a large jug with ice. Stir the macerated fruit mixture to ensure the sugar is dissolved, then tip into the jug with the wine and brandy. Stir, then top up with the sparkling water and serve.


BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
