If he was going to clean the inside and press it out, why did he scale it first?
Maybe it makes the skin more malleable for the inside cuts? (I have no idea myself - I'm guessing as to something reasonable)

The scaling part was to amaze you. I would assume if you eat the fish whole, you need to remove the scales.
