Any one got a good recipe for crisp beer batter fried fish. Family coming over for fish fry this pm, and one daughter doesn't like corn meal coated fish - there's one in every crowd! Every time I try a beer batter it comes out soggy. Hope some one has a tried and true method. Thanks.

I wouldn’t cook special for anyone. She eats it or she doesn’t eat. Or she can grill herself a piece of fish.

It's really not that much trouble. Besides others like it, too. Just need a good batter recipe.

Try something like this -

2 teaspoons kosher salt
1/2 teaspoon coarse ground black pepper
1 cup flour
1 tablespoon garlic powder
1 tablespoon paprika
1 large egg
12 ounces beer

I’ve used Bisquick and cold beer or seltzer water. Gotta have fizz! Stir wet into dry slowly. Most important point of batter is to keep it cold. Larger bowl of ice and little water to place batter bowl into. Let batter chill before use. Hot oil and cold batter looks like Long John Silvers when it floats. Too simple.

This came out good. Best so far. Used cold seltzer and refrigerated the batter. Everybody liked it.
