Also gumbo works well in the crock-pot. I make it with duck (wild) and shrimp or crawfish but you can use pretty much any meat you want. The roux has to be made on the stove-top but I think you can buy premade roux if you're bad about burning things. Pretty much any meat/veggie combo will work but you must add okra or file powder for the proper viscosity.

I have been underwhelmed by chicken and fish in the slow cooker.
You need rendered fat between the meat fibers for meat to taste good out of a crockpot.

No beef=pork

I have this book. It's got some great recipes

You can skip the meat or put in chicken, shrimp, whateva...you will need to adjust the cooking time with other meats. Add shrimp when you put in the Wondra. Go light on the cayenne pepper if you don't what the heat. Serve with garlic naan.

Here is how to make the "tried and true" US Senate navy bean soup served on the floor of the US senate for maybe 100 years.
Ingredients
1 pound dried navy beans, picked over
1 pound ham (preferably with bone)
1 large russet potato, peeled and quartered
Kosher salt
1/2 cup milk
2 tablespoons unsalted butter
1 large onion, chopped
1 stalk celery, chopped
2 cloves garlic, chopped
1/4 cup chopped fresh parsley
Freshly ground pepper

Put the beans in a large bowl and cover with about 3 times their volume of cold water. Soak overnight in a cool place.
Drain the beans and transfer to a large pot or Dutch oven. Add 10 cups water and the ham. Bring to a simmer over medium heat, then reduce the heat to low and cook until the beans are tender, about 1 hour, 30 minutes. Transfer the ham to a plate to cool slightly, then remove the bone, if used, and dice the meat. Return the meat to the pot.
Meanwhile, cover the potato with water in a saucepan and season with salt. Bring to a boil over medium-high heat, then reduce the heat and simmer until the potato is fork-tender, 20 to 25 minutes. Drain the potato; transfer to a bowl with the milk and mash with a potato masher or fork until smooth. Add the mashed potato to the bean soup and stir until combined.
Melt the butter in a large skillet over medium heat. Add the onion, celery, garlic and parsley and cook until the vegetables are translucent, 7 to 10 minutes. Add the vegetable mixture to the soup, reduce the heat to low and cook 1 hour, adding up to 2 more cups water if the soup is too thick. Season with salt and pepper.

I was on a deer lease a few years back, a guy was on there who worked for the Irving Fire Dept they made him be the cook at the fire dept when he was a rookie. This is one of his recipes that I really liked.


He would put it all in the crock pot in the morning when we would go out for the hunt and it was ready by lunch. The chicken breasts were already cooked.

4 c chicken stock
4 chick breasts boiled in the stock, then pull apart or fine diced.
1 bunch cilantro chopped
1/2 red onion chopped
4 cans white/navy beans
1 tsp garlic
1 tsp oregano
1 tsp pepper
1/2 tsp chili powder
1 tsp cumin
1 tsp salt

You can add some Eckridge sausage as well.

Cook in the crock pot on low for about 4 hours.

This is one we came across that is really good - pulled pork sandwiches - it makes a bunch - as in you could serve up 12 people real easy.

1 Byron’s frozen Pulled Pork from Sam’s (thaw out, and when your other pulled pork is ready, shred up the not-so good meat from this pulled pork in the tray, because it is still kinda chunky and you will add it to the other below after it is finished cooking)

Take a
2 lbs pork loin and put it in a crock pot

Mix together all the below ingredients and pour over the pork loin
½ cup vinegar (white)
2 cups ketchup
1 cup Original Kraft BBQ sauce
½ cup brown sugar
Move the pork loin around in the sauce to get it over, under and around the meat. Cook all day on low or at least 6 hours.

After the pulled pork has cooked, take it out of the crock pot. Throw away all the sauce in the crockpot (the sauce from the Bryon’s pulled pork is what makes it taste good). Shred the pork loin, and then put both pork loins in the crock pot

Add
½ - ¾ of a bottle of Kraft Original BBQ sauce to the combined pulled pork in the crockpot

Creamy Chicken Noodle Soup

1 lb. boneless, skinless thighs
1 lb. boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper, to taste
8 cups chicken stock
4 cloves garlic, minced
1 onion, diced
3 carrots, peeled and diced
3 stalks celery, diced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
2 bay leaves
1/2 cup heavy cream
1/4 cup all-purpose flour
8 ounces medium egg noodles
2 tablespoons chopped fresh parsley

Season chicken with salt and pepper, to taste.

Place chicken into a 6-qt slow cooker. Stir in chicken stock, garlic, onion, carrots, celery, thyme, rosemary and bay leaves; season with salt and pepper, to taste. Cover and cook on low heat for 6-8 hours;

reserve 1 cup and set aside.

Remove chicken from the slow cooker and shred, using two forks.

In a large bowl, whisk together heavy cream, flour and reserved 1 cup chicken stock mixture.

Stir chicken, heavy cream mixture and egg noodles into the slow cooker. Cover and cook on low heat for an additional 30-60 minutes, or until pasta is tender and soup is slightly thickened

Cook that rice with the pork, just be sure to add enough broth for the rice. It soaks up that pork juice and soup flavor, I would add some veggies with it.

One last one and it's the best - It's called Cowboy Beans

Soak 2 lbs of pinto beans overnight.
Next morning cook your beans with a ham hock or bacon in crock pot on high for about 4 hours.

About an hour before the beans are done add into the crock pot
one cup of onion
one cup of bell pepper
one cup of celery, all diced up

then take 1 lb of hamburger meat and brown it in a skillet
add in a package of lowery's taco seasoning just like the package calls out with a cup of water and simmer it for about 20 minutes

Add to the crock pot of beans one can of Rotel, one can of stewed tomatoes and a small can of tomato sauce

add salt, peper and chili powder to the crock pot of beans till you get the taste just right, then add in the cooked taco seasoning and enjoy, you will love it. It's like a soup with a chili flavor.
